Beanoa cornmato chili
Ingredients:
1 cup uncooked quinoa
3 cans selected beans - black beans, kidney beans, white beans
1 can diced tomato
2 cups vegetable broth
1 chopped onion
1 cup frozen corn
1 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
1 tsp salt
1/2 tbsp sugar
1/2 tsp coriander
1/2 tsp cinnamon
Directions:
Combine all ingredients into a crock pot or slow cooker and cook on LOW for 6 hours or HIGH for 4 hours.
Add more salt & pepper to taste.
Serve with cilantro, cheese, sour cream, avocado, or maybe some corn muffins and honey butter.
Broken tortilla chips also make a great topping. Juanitas Chip crumbles are the best.
