chickpea cauliflower tacos with slaw and BRUSSELS side
Ingredients:
2 cloves garlic
1 head cauliflower, chopped into florets
1 can chickpeas
1 bag of pre-cut slaw
1/4 cup extra virgin olive oil
1/2 cup vegan mayo
1 tsp maple syrup
1.5 tbsp apple cider vinegar
Juice of 1 lime
1 tsp cumin
1 tsp chili powder
1 1/2 tsp smoked paprika
1 tsp sea salt
1/4 tsp cayenne pepper
1/4 tsp fresh ground pepper
1/2 tsp celery salt
12 tortillas
Garnish: radishes, cilantro, shredded cheese
Directions:
Preheat oven to 400 degrees.
Mix cauliflower, chickpeas, garlic, and e.v.o.o. on a baking sheet.
Mix cumin, chili powder, smoked paprika, cayenne, sea salt in a bowl. Then sprinkle it on the chickpea / cauliflower mixture.
Put seasoned chickpea / cauliflower mixture in oven for 25 min.
Mix mayo, syrup, lime juice, celery salt, and pepper in a large mixing bowl.
Pour in bag of pre-cut slaw and mix together. Place in the fridge.
Heat tortillas on a warm pan.
Put 2 tbsp slaw, 2 tbsp chickpea / cauliflower mixture in warm tort.
Garnish with radishes, cilantro, cheese.
