Freekeh
ROASTED CAULIFLOWER AND PEPPERS OVER FREEKEH AND GARLIC TAHINI SAUCE
Ingredients:
8.8 oz of Freekeh
1 tbsp olive oil
salt & pepper
garlic
tahini
1 head of cauliflower
1 bell pepper
1/4 cup almonds
1 tsp cumin, 1/4 tsp coriander, 1/4 tsp turmeric,
& 1 tsp salt at least
3 1/2 cups broth
Directions:
Preheat oven 425 degrees.
Chop cauliflower and bell peppers.
Toss in olive oil and salt & pepper. Bake on a cookie sheet for 30–35 mins.
Heat oil in heavy bottom pan. Brown almonds in the pan.
Add spices. 1/4 tsp turmeric, 1/2 tsp salt, and garlic.
Add broth to pan and bring to a boil. Add Freekeh.
Cover and cook for 20–25 mins.
Serve with tahini sauce.
Garlic Tahini Sauce
1/4 cup Tahini / 2 tbsp lemon juice / 3 tbsp water / tsp of salt / pinch of crushed red pepper
Mix all things together and stick it in the fridge.
