Josh’s VEGAN shellz n peppers n cheeze
Ingredients:
1 box of medium shells or preferred noodle.
2 bell peppers
1 Anaheim pepper
2 serrano peppers
1/2 onion
2 cans coconut milk
2 tbsp coconut cream
4–5 tbsp flour
2 tbsp earth balance
1/2 cup nutritional yeast
salt & pepper to taste
1/2 tsp smoked paprika
1/2 tsp garlic powder
3 tsp minced garlic
1/2 cup Panko bread crumbs
1 tbs olive oil
Directions:
Cook noodles according to directions.
Preheat oven 475 degrees.
Heat olive oil in a skillet. Add garlic and onion until brown and clear.
Add coconut milk and coconut cream.
Add earth balance.
Add flour, yeast, and spices. Misk (mix with a whisk) together and bring to a boil.
In a separate pan, cook peppers with evoo on medium high. Salt & pepper.
Combine peppers and sauce.
In a large baking dish, combine and mix sauce (with peppers) and noodles.
Top with bread crumbs.
Bake in oven (at 475 degrees) for 20 mins, until bread crumbs are brown.
Rest for 5 mins.
