Lentil quinoa tacos

Makes 12-18 Tacos


Ingredients:

1 Cup Lentils

1/2 Cup Quinoa

4 Cloves Garlic, Crushed

1 1/4 Tsp Cumin

1 Tsp Chili Powder

1 Tsp Smoked Paprika

1/4 Tsp Ground Cayenne Pepper

Salt and Pepper to taste

4 Cups Water

Directions:

Combine all ingredients in a slow cooker.

Cook for 6-7 hours on low, or 4-4.5 hours on high.

Serve on tortillas with lettuce, tomato, onion, cilantro, cheese, or choice of toppings.
