Meatless Meatballs
Ingredients:
2 cups cooked quinoa
1/2 cup seasoned bread crumbs
2 eggs
oregano, crushed red pepper, salt, pepper, garlic powder, onion powder, garam masala, basil, turmeric, thyme
olive oil for pan
Directions:
Cook quinoa for 20–30 mins. Add a splash of evoo and salt to water.
Gather eggs, crumbs, spices. Or don’t.
Preheat oven to 350 degrees.
Add ingredients to a large bowl. Including cooked quinoa.
Using disposable gloves (or ziplock bags on hands), ball up mixture to desired ball size / recommended size: a little smaller than a golf ball.
Heat oil on a large skillet.
Fry the balls, rotating with a fork to a new side until brown.
Relocate balls to a cookie sheet lined with parchment paper and bake for 25 mins.
Serve with pasta and sauce plus a green side.
Parmesan and fresh basil sprinkle optional.
