Peanut noods

Peanut Sauce:

2 1/2 tbsp soy sauce

1 1/2 tbsp sesame seeds toasted

2 tbsp chunky peanut butter

1 tbsp rice vinegar

1 tbsp light brown sugar

1 1/2 tsp ginger

1 garlic clove, minced

1/2 tsp hot sauce

Hot Water

Noodles:

1/2 lb Spaghetti noodles or Chinese noodles

Vegetables:

1/2 lb asparagus

2 large carrots shaved or sliced

1/2 bell pepper

1/2 cucumber sliced

Directions:

Cook noodles according to directions. Salt the boiling water.

Sauté vegetables in sesame oil or avocado oil.

Blend sauce ingredients adding a few tbsp of hot water to achieve desired consistency.

When vegetables, noodles, and sauce are finished, mix together in the warm vegetable pan. Sprinkle with toasted sesame seeds.

Serve with fresh cilantro if you like that sort of thing.
